Processing Information
This Jinotega coffee is a Natural processed coffee. The natural process (also known as dry processing) is the oldest method of preparing coffee beans. Instead of removing the cherry’s outer layers before drying, the whole fruit is left intact and laid out to dry under the sun. This method allows the sugars and flavours from the fruit to seep into the bean, producing coffees that are fruit-forward, bold, and sweet.
In Jinotega’s climate, natural processing thrives. It requires careful turning and monitoring to prevent over-fermentation or mould, but when done right, the result is an aromatic, juicy cup that captures the terroir and artistry of the grower.
