Nicolas Di Stefano is a third-generation Master Roaster and Director of Di Stefano Coffee, one of Australia’s most respected family-owned coffee roasters. Having grown up in his family’s roasting facility, Nicolas learnt the craft from his grandfather, Joe Di Stefano, who instilled in him a deep respect for quality, tradition, and the pursuit of perfection.

With decades of family heritage behind him, Nicolas combines time-honoured Italian roasting techniques with modern innovation to create coffee that captures both authenticity and excellence. His approach blends old-world skill with a contemporary understanding of flavour, sustainability, and the evolving Australian coffee culture.
